Chardonnay like no other

The northernmost zone of Burgundy, Chablis is actually much closer to the Aube department in Champagne than it is to the Côte d’Or, and it shares with the Aube a terroir rife with Kimmeridgian limestone—a soil which, along with the area’s cool, marginal climate, produces Chardonnay of a singular character: mineral-dominated, marked by citrus, and with the unmistakable flavors of seashell and iodine. The vineyard hierarchy of the Côte d’Or extends to Chablis, with 40 premier crus recognized (some of which are climats of larger crus but able to be named on the label), and a single Chablis Grand Cru appellation subdivided into seven contiguous climats.
